Turkey Tenderloin Slow Cooker Stew

This turkey tenderloin stew is made with lean turkey - a healthy and delicious alternative to beef.
Ingredients
  • 2 lb turkey tenderloins, cut into ¾ inch pieces
  • 1 can diced tomatoes (no salt added or low sodium)
  • 1 can red kidney beans, drained (no salt added)
  • 1 yellow bell pepper, cut into ¾ inch pieces
  • 2 zucchinis, cut into ¾ inch pieces
  • 6 oz red pearl onions
  • 1 cup baby carrots, cut into bite size pieces
  • 1½ cup roasted garlic pasta sauce (I like Classico)
  • 3 cloves of garlic, minced
  • 1.5 tsp chili powder
  • 1 tsp garlic powder
  • ¼ tsp cumin
  • ½ tsp salt
  • ½ tsp pepper
Instructions
  1. Place turkey in slow cooker. Top with can of tomatoes.
  2. Add in bell pepper, zucchinis, onions, and carrots.
  3. Add seasonings and minced garlic.
  4. Add beans and pasta sauce and mix well.
  5. Cover and cook on LOW for 5 - 6 hours.
Notes
If you ended up using beef, increase the cooking time by 1 to 2 hours.
