Pumpkin Turkey Meatloaf

Perfect recipe for fall or even any time of the year!
Ingredients
  • Meatloaf:
  • 1 lb ground turkey, 99% lean
  • ½ red bell pepper, finely diced
  • ½ red onion, finely diced
  • ½ can pumpkin puree
  • ½ cup rolled oats
  • 1 egg
  • 1 Tbsp worcestershire sauce
  • ½ Tbsp chili powder
  • 1 tsp cinnamon
  • ½ tsp cayenne pepper
  • ¼ tsp salt
  • ½ tsp pepper

  • Glaze:
  • ⅓ cup pumpkin puree
  • ⅓ cup ketchup
  • ½ Tbsp worcestershire sauce
  • ⅛ tsp cinnamon
  • ½ tsp chili powder
  • ⅛ tsp cayenne pepper
Instructions
  1. Preheat oven to 350F. Spray a loaf pan with cooking spray.
  2. In a large bowl, mix together all meatloaf ingredients.
  3. Place mixture into the loaf pan.
  4. In a small bowl, mix together ingredients for the glaze.
  5. Spread 3-4 Tbsp of the glaze over the meatloaf.
  6. Bake for 45 minutes.
  7. Remove pan from oven and spread another 3-4 Tbsp of the glaze on top.
  8. Bake for another 20-25 minutes or until food thermometer reaches 165F.
Notes
You may use all of the glaze ingredients to top the meatloaf or save some to use as a sauce.
